This recipe is my own creation and violates the Italian pasta commandment to not add parmesan to seafood recipes. It is a combination of lemon sauce and Alredo with tomatoes – a bold mix, but your taste buds will love it! 🙂 This recipe works especially well if you do not have access to fresh shrimps (which happens frequently in Switzerland), but use frozen ones. If you use frozen shrimps, take them out 60 minutes before you start cooking, put them in a bowl and cover with cold water to unfreeze them. This pasta is highly addictive and not suitable for weight loss new year’s resolutions. You have been warned.
Lemony Shrimp Pasta
for 2 persons. Prep time: 30 min.
Ingredients
- 200g pasta (preferably bavette)
- 200g peeled shrimps (5-7 shrimps per person)
- 1 white onion
- juice of 1 lemon
- 150ml light cream (25% fat)
- 1 tbsp tomato puree
- handful of cherry tomatoes
- 2 tbsp grated parmesan
- smoked paprika powder, nutmeg, salt, pepper
- 3 tbsp olive oil, divided in 2tbsp and 1tbsp.
Preparation
- Rinse the shrimps well then pat them dry with a paper towel. In a bowl add smoked paprika powder, nutmeg, salt, pepper and mix together. Add the shrimps and toss to combine. Bring a skillet to medium-high heat. Add 2tbsp olive oil. Grill the shrimps for 2 minutes on each side. Take them out and cover with aluminum foil.
- Chop the onion. Add 1tbsp olive oil to the skillet and add the chopped onion, stir often until the onions are tender and turning translucent, about 3-5 minutes.
- Bring a pan with water to boil, add salt, cook the pasta according to instructions on the package.
- Pour the lemon juice into the skillet with the onion, then simmer and reduce for 2 minutes. Add the tomato puree, stir often, season with salt and pepper. Add the cream, keep stirring.
- Quarter the cherry tomatoes. Add them to the sauce 4 minutes before the pasta is ready. Add the grated parmesan, stir, reduce the heat slightly. Add the shrimps and combine well.
- If the sauce is too thick, add some of the pasta water. When the pasta is al dente, drain the water and add the pasta to the sauce. Mix well. Let sit for 2 minutes. Serve hot, make sure each plate as an equal amount of shrimps. Enjoy!
